Friendly Grape Tomato, Olive Oil, and Garlic Pasta
Simple and delicious, a great recipe to cook whilst you and an old friend talk about love and share a bottle of wine.
What better way to have a chat while you slowly and gently simmer tomatoes and olive oil. Terribly simple and also very lovely. Great for a deep conversation.
Ingredients
6 large cloves garlic ( or even a whole head if small ones)
300g grape tomatoes halved
Olive oil, about 3/4 cup (the higher quality the better)
Fresh ground pepper
Fresh basil, 5 sprigs
Fresh angel hair pasta, 6 nests
Method
Heat pan over medium low. Add olive oil to cover pan. Finely chop garlic. Add garlic to warmed olive oil cook for 30 seconds to 1 minute until fragrant but NOT browned. Add halved tomatoes. Gently cook over medium low heat, braising the tomatoes in the olive oil for about 30 to 35 minutes, adding olive oil gradually as the tomatoes break down, making sure the olive oil always covers the bottom of the pan. It's okay to gently mash the tomatoes with the back of a wooden spoon. The first picture shows the sauce at the beginning of cooking, the second, when it is finished. While the tomatoes bathe stand in the kitchen with an old friend and enjoy a glass of wine but don't forget to boil the water for the pasta. In the first photo, the tomatoes have just started cooking. In the second photo, they are nearly done. At this point put the angel hair nests into the boiling water, and cook for about 1 to 3 minutes, or according to package directions. Toss the sauce and pasta together, sprinkle with the basil. serve immediately with salt and fresh ground pepper.
