Full O’ Beans: Ol’ Fashioned Baked Beans
This old fashioned bean recipe comes from an old fashioned pamphlet that came with an old fashioned electric crock pot my parents received as a wedding gift. I cooked them here in an old British casserole dish. Classic inexpensive comfort food that never goes out of style.
Here I used my homemade chunky Ketchup Catch-up recipe. You can even reserve some to put on top afterwards. They taste even better the second day.
Ingredients
2 cups Navy beans (soaked overnight)
4 slices Thick bacon (chopped)
1 Onion (chopped)
1 1/2 cups Fresh water
1/2 cup Reserved bean liquid
1/4 cup Molasses
1/2 cup chunky Ketchup Catch-up (chunky homemade ketchup)
1 tsp Mustard powder
1 1/2 tsp Salt
Cooking Method
Pre-Cook the Beans: Simmer your soaked beans in plenty of water until tender. Reserve 1/2 cup of the cooking water, then drain the beans.
Mix: In your baking dish or Dutch oven, combine the tender beans, onion, and bacon.
The Sauce: Whisk the 1.5 cups fresh water and 0.5 cup bean liquid with the molasses, ketchup, mustard, and salt. Pour this over the beans.
Bake: Cover and bake at 325°F.
Serve: It's great with a little more homemade Ketchup Catch-up.
* Note: Because you are using less water, check them after 2 hours. Since the beans are already tender and the liquid is low, they will reach that perfect "sticky" consistency much faster than the standard version.
