Hero Tempeh Bacon Collard Greens!

Prep time: 10 minutes | Cook time: 20 minutes | Servings: 2-3

Ingredients

* 1 tbsp Coconut oil

* 170g Tempeh bacon, diced

* 1 Onion, sliced

* 1 bunch Collard greens, stemmed and chopped

* 3 tbsp Apple cider vinegar

* 1 tbsp Chili flakes

* 1 tbsp Coconut powder

* 2 tbsp Water (for reconstitution)

* Salt and pepper to taste

Instructions

* Crisp the Tempeh: Heat the coconut oil in a large skillet or pot over medium-high heat. Add the diced tempeh bacon and fry until golden brown and crispy. Remove the tempeh from the pan and set it aside.

* Sauté Aromatics: In the same pan, add the sliced onion. Sauté for 5–7 minutes until softened and translucent.

* Prepare Coconut Base: While the onions cook, whisk the 1 tbsp coconut powder into 2 tbsp water until smooth and reconstituted.

* Wilt the Greens: Add the collard greens to the pan. Toss frequently until they begin to wilt and turn a vibrant green.

* Deglaze and Simmer: Pour in the apple cider vinegar, the reconstituted coconut liquid, and the chili flakes. Stir well to coat the greens. Cover and cook for 8–10 minutes until tender.

* Final Toss: Fold the crispy tempeh bacon back into the pan. Season with salt and pepper to taste and serve immediately.
