Sweet American Berry Scones for Sharing

These scones may spread too much if the batter isn't cool enough, but even if they do, they will still taste great. Technically drop scones, but I cut them into triangles because I like to pretend I'm British.



I recently made four batches of these scones for a charity bake sale. Smart Pig told me to do it. For those of you new here, I have a pig in my kitchen who tells me to share food, man oh man is he smart.  I added strawberries, raspberries, black cherries, and fresh black currants. All were good and I admit I sampled!!



2 cups all purpose flour

½ cup sugar

¼ teaspoon salt 

2 ½ teaspoons baking powder

½ cup butter

½ cup buttermilk (or a milk and vinegar substitute)

1 egg

1 teaspoon vanilla extract 

1 cup berries of choice. If frozen, thaw, chop and drain

1 more egg for egg wash



1 day ahead: freeze butter.

Sift together flour, salt and baking powder. Mix in sugar.

Grate butter. Rub butter into flour mixture with your hands till it resembles fine crumbs. I love this part as it's so nice to do something tactile! It's good for your health like making pottery or gardening.

Beat together egg vanilla and buttermilk in separate bowl.

Make a “well” in middle of dry ingredients and add wet ingredients to the well.

Gently combine the wet and dry with your hands until just mixed. Add berries and mix a little more. Oooh getting your hands dirty again!

Chill 1 hour and do some dishes. Another opportunity to do something tactile! I once told mum I enjoy doing dishes because I do them mindfully and she said yeah I guess it's nice to do things mindlessly, lol. It's a generation gap I guess. It reminds me that my dear aunt Mary used to sign cards lol meaning “lots of love.” but isn't it lots of love when you laugh out loud anyway? Anyhew, batter is chilled by now.

Preheat oven to 400F. Take the batter out of the fridge and on a well floured surface, form into a disk. Cut into eight triangles.

Place on baking tray and egg wash, feeling relieved that it didn't matter that you over floured the surface because they will still shine!

Bake for 18 to 24 minutes. It depends on your oven and fridge and the air pressure, etc.



Voila! Now give some away. Share with a friend or neighbor.
