In the world of gastronomy, there is a fundamental divide that has nothing to do with the quality of the ingredients and everything to do with the intent of the maker. While both involve the transformation of raw matter into sustenance, home cooking and fine dining occupy two entirely different philosophical spaces: one is a craft, rooted in utility and repetition; the other is performance art, rooted in spectacle and the ephemeral.
