Lean Green Falafel Machine

Prep time: 20 mins (plus chilling) | Cook time: 25–30 mins | Yields: approx. 15–18 patties

I love LOTS of parsley in my falafel. And why not? It's just a tad healthier!

More delicious deep fried, but oh so much easier and healthier to bake. Substitute the all-purpose flour with more chickpea flour if you'd like them gluten free as well as vegan.

Excellent for freezing, then pop a couple in the microwave for a healthy snack.

Ingredients

2 cups chickpeas, soaked overnight and drained (do not use canned)

1/2 cooking onion, food processed or roughly chopped

1 bunch fresh parsley (approximately 1.5 cups of leaves)

4 teaspoons garlic powder

2 teaspoons ground cumin

1 teaspoon ground coriander

2 teaspoons salt

1 teaspoon red pepper flakes

1 tablespoon lemon juice

1/2 teaspoon baking soda

3 tablespoons chickpea flour

3 tablespoons all-purpose flour

Olive oil (for brushing and the baking sheet)

Instructions

* Prep the Chickpeas: Ensure your chickpeas have been soaked in cold water for at least 12–24 hours and thoroughly drained.

* Combine & Process: In a food processor, combine the soaked chickpeas, onion, parsley, garlic powder, cumin, coriander, salt, pepper flakes, and lemon juice. Pulse until it reaches a coarse, meal-like texture.

* Bind: Sprinkle in the chickpea flour and the all-purpose flour. Pulse a few times until fully incorporated.

* Chill: Transfer to a bowl, cover, and refrigerate for 30 minutes to 1 hour.

* Preheat: Preheat your oven to 425°F. Generously grease a rimmed baking sheet with olive oil (approx. 2–3 tablespoons).

* Add Leavening: Stir the baking soda into the chilled mixture.

* Form Patties: Scoop about 2 tablespoons of the mixture. Gently flatten them into thick patties (about 1/2 inch thick).

* Arrange: Place the patties on the oiled baking sheet. Brush or spray the tops of the patties generously with more olive oil to help them brown.

* Bake: Bake for 12 minutes, then carefully flip the patties over. Bake for another 12 minutes until they are deep golden brown and firm.

* Serve: Let them cool on the pan for 5 minutes before serving.
