Roasted Stuffed Zucchini Cuties

Vegetables can be the star of the show, and this recipe proves it! Great to serve to guests because it's foolproof and presents nicely.

Ingredients

Vegetables: 2 Zucchinis, 1 Shallot, 1 Tomato

Fats: 1 teaspoon Olive oil, 1 teaspoon butter

Seasoning: 1 teaspoon Basil, ½ teaspoon Oregano

Topping: Grated Mozzarella cheese

Instructions

Prep the Zucchini: Slice the zucchinis in half lengthwise. Scoop out the centers to create a "boat" shape. Keep the interior flesh and chop it up finely to use in the filling.

Initial Roast: Place the hollowed zucchini shells on a baking sheet. Roast at 375°F (190°C) for 15 minutes.

Make the Filling: While the shells roast, heat the olive oil and butter in a pan. Sauté the chopped zucchini interior, diced shallot, and chopped tomato. Stir in the basil and oregano until the mixture is softened and fragrant.

Stuff and Bake: Remove the shells from the oven. Fill them generously with the sautéed mixture. Top each boat with a layer of grated mozzarella.

Final Melt: Return to the oven and bake for another 15 minutes until the cheese is melted, bubbly and brown.
